higher internal temp for more well done. The internet has numbers. if you reset it (the 15m) do it slightly LOWER than you want as it'll keep cooking a bit. (eg I want 45, I stop at 40)
depends how you like it for what temp (internal) to go to, but I like the rare side of medium rare
salt and pepper (quite a lot of pepper, not a lot of salt) both sides. let it come to room temp
Cook both sides, flip often. Remove when the internal is around 40 C. wrap in tin foil, wait about 15m
