There's no polar routings needed for Project Sunrise, at least to New York.
When I've spoken to them in the past they have said London routings would follow a similar routing as PER-LHR.

What United is seeing is the return of the old "Southern Cross Route" β traffic flying from Australia/NZ to Europe via the US.
Air New Zealand served London and Frankfurt via LAX for decades, here on this 1990 map.

Manhy Australians/Kiwis fly via Gulf hubs to Europe.
Those hubs are now closed and they have to find a different way to Europe. Some, per my friends there, are simply avoiding the Gulf for future trips in the event of further disruptions.
United is seeing more Australia/NZ-Europe bookings since the the US attack on Iran closed Gulf hubs.
βEach day this week, we have booked over 1,000 people from Australia and New Zealand to Europe. Last year, we booked less than one a day,β CEO Scott Kirby said.

A lot of change at the top of Delta this spring, the biggest is legend President Glen Hauenstein retiring.
Now COO John Laughter is also retiring; his replacement and other appointments are all internal promotions so likely a continuation of Delta's strategy.
