Ears are for Instagram. Real grain nerds like high hydration, long fermented loaves with good mouth feel, fermented flavor, and, for me at least, a longer, lower temp bake to intentionally create a gradient between crumb and crust.

I never understood how that became the common thinking about social media. When the first sights came out, they were essentially micro blogs with an RSS aggregator that learned what you thought was important using likes. It was a novel use of Bayesian filters to manage feeds instead of email.
