Chop celery heart and carrots small, put in soup pot with tablespoon of olive 🫒 oil - cook on medium heat for about 10 minutes. Add tablespoon of grated fresh ginger 🫚 and two minced garlic 🧄 cloves. Cook for minute then add 3 diced beets. 🫜 1/2 teaspoon of salt 🧂 1/4 teaspoon cayenne powder 1/4 teaspoon ground Thai pepper 🌶️ and 4 cups of broth of your choice. After a bit of time add beet greens. Cook till beets are tender. You can add almond or other milk. Either eat chunky or blend with some kinda blender. Garnish with cilantro, green onion, and cheddar or other stuff that floats your boat.

Spicy beet, celery, carrot 🥕 soup. Last night was garnished with green onions, cilantro, and cheddar.

My Meemaw loved beets 🫜 and tried to sell them the wrong way. She could have just said they are super hero food that you know is working when it turns your pee and poop red.
