The votes from that candidate are recounted based on their voters second choices. The Apple-A voters second choice would of course be Apple-B.
Apple-B is now at 58% and beats Banana.

With Instant Runoff the cadidates are ranked from best to worst by the voters. The election is counted as normal, but instead of the the person with the most votes winning, the person with the least votes (Apple-A) get's eliminated.

But if the apple lovers have two choices, but the banana lovers only have one, then the apple votes might be spit 26% for Apple-A, and 32% for Apple-B between the two apple candidates, while the Banana still gets 42%.

Plurality Voting is by far one of the worst voting systems due to the Spoiler Effect.
Example: 58% the people want President Apple, and 42% want President Bananas.
If there is one candidate on each side, the apple lovers win, cause they are the majority.
