Haven’t cooked in a while.
I ended up drying out the tofu in the microwave before pan frying it in the skillet and seasoning it with teriyaki sauce and a little bit of salt.

Store the 2/3 of tofu that will be used later in water in a punnet, closed with lid, keep in the fridge. Change water daily. Use within 4/5 days
I cut 100 gr of tofu (1/3 of packet) in slices. Into a flat bowl, sprinkle cayenne pepper, cumin, coriander, turmeric, ginger powders, (whatever you like). Add tamari or soy sauce (about 2 spoons)
Mix delicately, let it soak, then add into dish 3mn before end of cooking.
