Absolutely reasonable point of view, personally with undefined I have more the feeling of having made a mistake in accessing the property. It might be a heritage of SQL to want to see attributes when listing items

That's just my two cents.. when I got this error, most of the time it was a bug or a weak input validation; I almost always add a check upstream and set empty values to NULL with the idea that "undefined" is not a value accepted by DynamoDB. I read that more like "are you sure that's right?"

It's possible to use #EventBridge event "CloudFormation Resource Status Change" to execute code when the #CloudFormation stack itself is created. Interesting solution for stack deployment finalization. Here an example template: gist.github.com/daaru00/d5443e5de9b25fd7... #AWS
